After working several jobs I decided that I wanted to become a chef and open my own restaurant. I enrolled and graduated from Le Cordon Bleu in 2007 were I 1st learned how to cook risotto. Between 2007 and 2016 I refined my skills in kitchen at Thunder Valley Casino, Sunrise Senior Living Center and Eskaton Village. It was at Eskaton that I realized that I wanted to open a food truck. In early 2016 I created all the menu items and bought my food truck. By July 2016 I had my food truck up and running and serving my fried risotto balls. 

Since then I have refined my menu to offer house smoked pork, seasoned chicken and fried risotto(Arancini). All of my food is made from scratch. I’m especially proud of my Jesse James and Gunslinger Sauce.
